Fluffy Buttermilk Pancakes

Light, airy pancakes using PEP milk, perfect for a weekend brunch with fresh fruit.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tbsp sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 1/4 cups PEP milk
  • 1 egg
  • 2 tbsp melted butter

Steps

  1. 1Whisk flour, sugar, baking powder, and salt in a bowl.
  2. 2In another bowl, whisk PEP milk, egg, and melted butter.
  3. 3Combine wet and dry ingredients until just mixed (a few lumps are fine).
  4. 4Heat a lightly greased pan over medium, pour 1/4 cup batter, and cook until bubbles form, then flip and cook until golden.

Tips

  • Do not overmix; a slightly lumpy batter makes fluffier pancakes.
  • Keep pancakes warm in a low oven while you finish the batch.
