Fluffy Buttermilk Pancakes

Ingredients
- 1 1/2 cups all-purpose flour
- 1 tbsp sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 1/4 cups PEP milk
- 1 egg
- 2 tbsp melted butter
Steps
- 1Whisk flour, sugar, baking powder, and salt in a bowl.
- 2In another bowl, whisk PEP milk, egg, and melted butter.
- 3Combine wet and dry ingredients until just mixed (a few lumps are fine).
- 4Heat a lightly greased pan over medium, pour 1/4 cup batter, and cook until bubbles form, then flip and cook until golden.
Tips
- Do not overmix; a slightly lumpy batter makes fluffier pancakes.
- Keep pancakes warm in a low oven while you finish the batch.
